I know sometimes cooking for two can seem tedious and it seems that there is not a lot of great recipes out there that cater for two. In today's economic climate we can't buy easy takeaways every night or eat at out favorite restaurants all the time. In these hard times we still need to eat nutritious affordable dishes. Often I see delicious recipes I would love to make but have been put off when I see - 'serves 6' at the bottom. But have no fear, I have some easy ways to help you!In my busy household not everyone is around at meal times, on occasion leaving just two of us. I don't like to let things go to waste or over cook when it isn't needed. When cooking for two, you can still cook your favorite recipes. There are some great ways you can use recipes, that feed more people, to your advantage. You don't have to miss out on tasty food any longer. You can still cook healthy flavorful food without wasting your hard earned money.Here are some easy ways:- I found that if cook meals that serve more people i can save money. Now if I cook meals that 'serve 6' nothing is wasted. Left overs are great for lunches and beat spending extra money.- Divide the recipe. Take that 'serves 6' recipe and show it who's boss. I divide the recipe in half. Cooking is almost a science, if halving a recipe be sure to halve all the ingredients. This is important to keep the balance of the dish and will avoid disappointment. This is a great way to also halve the cost!- Make one pot meals like casseroles and soups. These are great to freeze for those nights when you would rather put your feet up then spend the evening in the kitchen. Once the one pot meal is divided you have your very own 'takeaways' in the freezer.
